You have purchased premium, authentic Ceylon tea. However, the journey doesn't end there. The way you prepare the tea dictates whether you experience its full spectrum of flavors or end up with a sub-par cup. Mastering the perfect brew requires a balance of quality water, correct temperature, and precise timing. Here are expert tips directly from our master blenders.
1. Start with Quality Water
A cup of tea is 99% water. If your tap water has a heavy mineral, chlorine, or metallic taste, your tea will absorb those flavors. Always use fresh, cold, filtered water. Never re-boil water that has been sitting in the kettle, as boiling removes the oxygen necessary to fully extract the tea’s aromatic compounds.
2. Respect the Ratios
A standard rule of thumb for loose leaf tea is 1 teaspoon (about 2-3 grams) per 8-ounce cup of water. If you prefer a stronger cup, do not steep the tea for a longer time—this only extracts bitter tannins. Instead, increase the amount of tea leaves while keeping the steeping time the same.
3. The Crucial Role of Temperature
Different tea grades demand different water temperatures:
- Ceylon Black Tea: Requires a rolling boil (100°C or 212°F). The high heat is necessary to break down the highly oxidized cell walls and release the bold flavors.
- Ceylon Green Tea: Boiling water will scald green tea leaves, resulting in a bitter, grassy cup. Allow the water to rest for 2-3 minutes after boiling, bringing it down to roughly 80°C (175°F) before pouring.
4. Steeping Times
For Black tea, steep for 3 to 5 minutes depending on desired strength. For Green tea, steep for a much shorter duration, usually 1 to 3 minutes. Always remove the infuser or tea bag immediately once the time is up to halt the extraction process.
5. The Right Equipment
Ensure your teapot or infuser allows the leaves plenty of room to expand. As premium Ceylon loose leaf tea hydrates, the leaves unfurl significantly. If they are cramped in a small infuser ball, the water cannot circulate, and you will miss out on the complex flavors. Enjoy the ritual!
